Food Experiments with Zucchini

My love for Zucchini grows. After seeing a couple of recipes online, I decided to prepare a couple of dishes with Zucchini.

Stir Fry Tofu and Zucchini

Recipe:

Ingredients
  1. 200 gram firm tofu cut into cubes
  2. 5 – 6 green beans cut into half lengthwise
  3. 1/2 Cup red bell pepper diced
  4. 1/2 Cup zucchini cut into cubes
  5. 1/2 Cup squash cut into cubes
  6. 1 tbsp fine chopped ginger
  7. 1 tbsp fine chopped garlic
  8. 1 small red chili fine chopped
  9. 1 tbsp olive oil
  10. 1 tsp soy sauce
  11. Salt and black pepper to taste
  12. 1 tsp sesame seeds
  13. 1/2 tsp organic honey (optional)

The only difference to this recipe with my experiment is that I added lettuce on the second preparation. The imagination is endless and I could add more veggies or even meat to this salad based on my tastes and preferences.

Zucchini Fried Rice with my daily breakfast

Recipe:

Ingredients

  1. 1/2 green Zucchini
  2. 1/2 yellow Zucchini
  3. 1 cup rice (I used left over rice from the previous evening)
  4. 1 long green chilli (you can use 2 if you like a lot of spice)
  5. 3 garlic cloves
  6. 2 Tablespoons Soya Sauce
  7. Olive Oil
  8. Salt to taste
  9. Spring onions

You can also add green peas, sweetcorn, peppers et cetera.

Directions:

Take a pan, add olive oil and let the pan turn hot. Add chilli, garlic and spring onions and give it a stir. Add the Zucchinis and stir for a minute. Add Soya Sauce after a couple of minutes once the Zucchinis turn a bit soft. Stir the mixture keeping the flame high. Add rice and salt and stir for 2 minutes. Just before you serve, you may add some more spring onions if needed.

Storytelling time:

For the last 3 months, I have been eating very healthy food, which is very unusual of me because am a very big foodie and I love cooking and baking. I have taken a decision to improve my health, fitness and lifestyle this year.

I had a habit of dieting and working out for 6 months and the rest six months I would eat like there is no tomorrow. But, that was definitely making me feel uncomfortable and less healthy. I was reviewing restaurants until December 2016 and baking sweets and cakes almost thrice a week.

On December 31st, I did enjoy a lot with my friends, but for the next one week, I suffered from quite a few illnesses which really shook me up and taught me a lesson. It was truly a reality check. I told myself that it was time for me to not just love myself but take care of myself in order to live happily and healthy. Since then, there has been no looking back. I have lost 12 kgs in 12 weeks by exercising and eating healthy.
